While surfing the web, DH discovered a few oatmeal recipes that called for an egg, to up the protein as well as make it more creamy. Since then he has been tinkering, and I think this recipe is about as perfect as it can get.

2 cups water
1 cup oatmeal
1 Tbsp vanilla
1 egg
1 Tbsp brown sugar
1. Combine water, oatmeal, and vanilla and cook over medium heat until it gets bubbly.
2. Add the egg, mix well, and lower to a simmer, and let simmer for about 10 minutes.
Important note! Once it starts to bubble turn the heat down then add the egg. Beat it in as fast as you can or you will end up with a poached egg in your oatmeal.
3. Add brown sugar, remove from heat, and serve with maple syrup drizzled on top.
The Verdict: This is our new favorite weekend breakfast. Sooo creamy and tasty.

What a nice recipe!
i just had oatmeal for breakfast, i added honey and raspberry to it and it was filling and delicious. Thanks for posting your recipe, i should try it out sometime.

I would never think of adding an egg to oatmeal. I always complain that even with steel-cut oats I’m hungry a few hours later, so I’m going to try this. Thanks for a new twist on a breakfast favorite.

I did this years ago when my oldest were young. I think I read about it in “More with Less” back in the 70’s. Since our granddaughter is so tiny, I just suggested this to our daughter as a way to get more protein in her.

I’m thinking that the heat was too high. You want to lower the heat to low, stir constantly and add the egg.

Sooooo it’s like a raw egg mixed in your oatmeal?? Orrrr it cooks just ever-so-slightly? I’m not sure if I like the idea of gooey egg mixed in my oatmeal… what am I missing? lolol

It does get cooked, it’s not gooey LOL. The heat of the oatmeal cooks it. Not that there’s anything wrong with raw egg (as any of the Nourishing people will tell you 😉
