Spring has sprung! It seems like overnight the farmer’s market is suddenly bursting with lettuce, spinach, and strawberries. I can finally get started on the spring recipes fromΒ Simply in Season like this one.

3 eggs
1 cup milk
1/2 cup whole wheat pastry flour
1/2 cup flour
1 tsp baking powder
2 cups cheese (shredded)
8 ounces fresh spinach washed, dried and torn
1. Mix together everything except the cheese and spinach.
2. Mix in the cheese and spinach, and press into a greased square baking pan. Bake in a preheated oven at 350F until a knife comes out clean, about 30-35 minutes 40-45 minutes.
Servings: 4
The Verdict: Very tasty and filling, the spinach is not overpowering at all. DH added even more cheese on top after it was cooked. It kind of reminds me of a crustless quiche, except a bit of a crust is formed where the bottom touches the stone while baking. (I do most of my baking in stoneware).

This is the first thing I have made from SIS that was really disappointing. Even my hubby who loves and eats anything barely touched it. I thought it was so flavorless. I might try in again and add a lot of fresh basil. The thing needed some spices!!

I made this tonight. At the last minute I added a layer of leftover browned ground beef on the bottom and threw in some leftover chopped onion. It was fantastic. It is a little odd that there isn’t even salt and pepper in this recipe. I maxed out the cheese, used sharp cheddar.

great idea! I think it might even be good with other random vegetables thrown in, like tomatoes when they come into season.
