Don’t you just love skillet dinners that you can throw together in a snap? This is just such a dish. Although it takes awhile to simmer, the amount of active time is practically nil.

This recipe from the cookbook Simply in Season
8 oz dried apricots
1 1/2 cups boiling water
2 lbs boneless pork tenderloin
1 small onion (chopped)
2 Tbs soy sauce
1/4 tsp pepper
1. Pour boiling water over apricots and soak while preparing the pork.
2. Cube the tenderloin, and brown along with the onion in a large frypan over medium heat. May need to use 1 T of oil.
3. Add soy sauce, pepper, apricots and 1/2 C of the soaking liquid to the pork. Cover, lower heat, and simmer for 45 minutes, adding more liquid if necessary to prevent sticking. Serve over rice.

The Verdict: The pork became really tender and picked up the sweetness of the apricot, without being overly sweet. The pepper and soy sauce added just a little something so it wasn’t bland. The recipe gave the option of throwing in broccoli during the last five minutes, and I think that any green vegetable would have been a great addition. Thumbs up for a quick and easy meal!
