Pork Apricot Skillet

dried apricots

boiling water

boneless pork tenderloin

onion (chopped)

soy sauce

Pour boiling water over apricots and soak while preparing the pork.

Cube the tenderloin, and brown along with the onion in a large frypan over medium heat. May need to use 1 T of oil.

Add soy sauce, pepper, apricots and 1/2 C of the soaking liquid to the pork. Cover, lower heat, and simmer for 45 minutes, adding more liquid if necessary to prevent sticking. Serve over rice.
