Cube the tenderloin, and brown along with the onion in a large frypan over medium heat. May need to use 1 T of oil.

Add soy sauce, pepper, apricots and 1/2 C of the soaking liquid to the pork. Cover, lower heat, and simmer for 45 minutes, adding more liquid if necessary to prevent sticking. Serve over rice.
