Aren’t these plums gorgeous? I picked them up at a roadside fruit stand last Saturday. Just perfect for the Plum Tart that I wanted to make from Simply in Season. Even though the finished product didn’t turn out nearly as perfect as a Smitten Kitten photo, it was still tasty.

1 cup flour (can use up to 1/3 C whole wheat)
1/3 cup butter
2 Tbs powdered sugar
6 plums (pitted and halved)
3/4 cup sugar
2 tsp ground cinnamon
1. Combine the crust ingredients until no piece is larger than a pea. Press into tart pan or 9? pie pan.
2. If desired, sprinkle 1 T tapioca on the bottom.
3. Arrange plum halves cut side up on the crust. Combine cinnamon and sugar and sprinkle on top of the plums.
4. Bake in a preheated oven at 350F for 45 minutes or until the filling starts boiling.
5. Cool and serve with whipped cream.
Servings: 8
Yield: 1 tart
The Verdict: The crust is so light, crunchy, and tasty. The filling is good too, but it could have used less sugar (I know, how could that be? Oh, and I encourage you to NOT look at the nutrition info.) DH said it was good. I asked if he thought it could use less sugar. “Yes,” he said. “And less stems.” As I threw a pillow in the general direction of his head, I licked the plate.
