I forget where I read it, but one of my many cookbooks suggests spending time in the kitchen every day. I definitely see where this would be a benefit, and I will probably need to do this if I’m going to finish all the recipes in Simply in Season by my deadline. The reason it’s a benefit is it’s easier to keep on top of cleaning, plus you have a better idea of what’s lurking in your refrigerator. I noticed that I had a ton of mint as I had bought a bunch when I only needed a few tablespoons for another recipe, so I decided to try to make the Orange Mint Tea from Simply in Season. Believe it or not, it’s been quite warm here in Michigan and I thought this would be a refreshing treat.

3 cups water
6 sprigs fresh mint leaves
1/3 cup sugar
2 cups orange juice
1/2 cup lemon juice
water and ice
1. Bring 3 C water to a boil in a saucepan; add mint leaves, cover, remove from heat and let steep for 15 minutes or more. Remove mint.
2. Add the sugar until dissolved. At this point you can freeze the concentrate for later use if desired.
3. Combine the juices in a half gallon pitcher. Add mint water plus additional water and ice to fill the pitcher.
Servings: 8.5
Yield: 2 qt
The verdict: Definitely refreshing, and it’s light – the taste of the mint and orange come through but it’s not overpowering or like drinking orange juice. And, a splash of vodka adds a depth of flavor, if desired. This would be a great party beverage – especially the nonalcoholic version. I could see serving this at a baby shower.

I have a weakness for mint tea ever since I spent a few months in Tunisia. I think the orange would be a nice touch. I wonder how it would taste with stevia instead of sugar –sugar is on the cellulite diet black list 😉

If you can freeze the concentrate, what about freezing it in ice cube trays and adding one to a glass of water? This sounds like a great treat though!
