This was nearly a disaster, as I made them while I was trying to also make dinner and participate in the Tweet & Taste at the same time. Why was I doing this? Because I was assigned snack duty at work. Luckily disaster was averted, and I was able to put this in the “complete” column of my Simply in Season recipes.

1/2 cup butter (softened)
1/2 cup oil
1 cup sugar
2 Tbs honey
1 egg
2 tsp vanilla
2 1/2 cup rolled oats
1 1/2 cups whole wheat flour
1 cup dried fruits (apricots, dates, raisins, etc. I used diced “dried plums,” AKA prunes. I had to snicker when I told my coworker that I was making dried plum cookies. She said she’s never heard of them but they sounded yummy! I used them because I have so many left from the Marrakesh Lamb Stew.)
1 cup coconut
1 tsp baking soda
1. Cream together butter, oil, sugar, and honey.
2. Beat in egg and vanilla.
3. Combine remaining ingredients separately, and stir into the creamed mixture in about 3 additions. Add a little extra flour if mixture seems too wet. Drop by rounded teaspoons on greased baking sheets.
4. Bake in preheated oven at 375F until the centers spring back, 11-13 minutes.
Servings: 24
Yield: 4 dozen cookies
The Verdict: Did I mention that I also forgot to cream in the egg and vanilla, and realized it as I was putting the Kitchen Aid away? Well, I did. So I hauled it back out and blended as best I could and crossed my fingers. They turned out just fine. A bit on the underdone side (I was afraid of them burning). I love coconut in cookies now! And prunes aren’t bad either.

I love coconut in cookies too- it seems to make them more ‘substantial’. We love oatmeal cookies as well, going to have to dice up some dried fruit to use next time instead of chocolate chips! Sounds great!

I just found your fabulous blog where you’re cooking your way through my favourite cookery book. I shall enjoy reading your posts on things. This recipe is one of my favourites – I tend to cook a third of the recipe and freeze the rest uncooked (in cookie-sized blobs) for later as it makes far too much for us. I usually use dried apples and raisins, or dried apricots, sultanas and ground almonds, but I’d never thought of prunes. Maybe I’ll try that next time. Yummy!
