When I saw this recipe in Simply in Season I thought “yay, I have a mulberry tree!” Unfortunately the dogs love to eat the mulberries off the ground, and the birds eat the ones on the tree. So between them I don’t have many mulberries. I decided to substitute a mix of currants and blueberries instead for the 4th of July weekend.

4 cups mulberries
3 Tbs sugar
2 Tbs flour
1/2 cup sugar
3 Tbs butter (softened)
1 egg
1/4 tsp vanilla
1 cup flour
1 tsp baking powder
1/2 tsp salt
1/3 cup milk
1. Spread the berries in a greased/floured 9×9 inch pan.
2. Combine the sugar and flour and sprinkle over the berries.
3. Cream together butter and sugar; mix in egg and vanilla.
4. Combine the dry ingredients and add to the creamed mixture alternately with milk. Drop batter by spoonfuls over the fruit (all the fruit may not be covered). Bake in a preheated 350F oven for 30-40 minutes. Serve with whipped cream.
Servings: 8
The Verdict: DH and I loved this, although I’m not sure why it’s called pudding cake. The tartness of the currants went well with the sweet blueberries and whipped cream.
