This was one of the first recipes I made when I first bought Simply in Season, and it remains one of my favorites. I just love the combination of spices.

1 medium onion
1/2 cup fresh parsley
1 lb ground beef
1 tsp cardamom
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground allspice
1/2 tsp ground coriander
1/2 tsp pepper
1. Place onion and parsley, chopped, in food processor or put through food grinder.
2. Add all other ingredients and process together, in batches if necessary. Tastes best if refrigerated for several hours but is ready immediately. Press meat mixture into botton of 9×9 inch pan and bake at 350F for an hour. Allow to cool 5 minutes, and serve on a bed of parsley.
3. Can also grill (on skewers, in sausage-shaped cylinders, for 30-40 minutes) or pan fry.

The Verdict: As I mentioned, this is one of my and DH’s favorite recipes. However, this time we used part ground venison/part ground beef and it turned out a little dry. Next time I will be sure to check it 5 minutes before the time is up when using ground venison.
