Place onion and parsley, chopped, in food processor or put through food grinder.

Add all other ingredients and process together, in batches if necessary. Tastes best if refrigerated for several hours but is ready immediately. Press meat mixture into botton of 9x9 inch pan and bake at 350F for an hour. Allow to cool 5 minutes, and serve on a bed of parsley.

Can also grill (on skewers, in sausage-shaped cylinders, for 30-40 minutes) or pan fry.
