I had kept putting off this recipe from Simply in Season because of the overnight soak. But I had some yogurt left that needed to be used up so I gave it a shot.

2 cups rolled oats
2 cups buttermilk (or nonfat yogurt, if desired)
2 eggs (lightly beaten)
1/4 cup oil
1/2 cup flour
2 Tbs sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1. The night before, mix the oats and buttermilk or yogurt together in a large bowl, cover, and refrigerate.
2. In the morning, stir together the eggs and oil.
3. Mix together the remaining ingredients (can do this step the night before), and add to batter and mix briefly. Fry in a hot, greased frypan.
Servings: 4
The Verdict: Even though DH said these were a pain to make because they didn’t flip well, they were awesome! I loved the flavor and texture. It was like eating oatmeal, except in pancake form.
