Believe it or not, it’s been quite cold in Michigan. It’s colder now than it was in April. So I decided to make some Hearty Lentil Stew from Simply in Season to warm up a bit.

4 cups water
1 cup dried lentils (sorted, rinsed, and drained)
1 cup tomatoes (chopped)
4 large carrots (diced)
2 onions (chopped)
1 tsp thyme
1/2 tsp marjoram
1/4 cup fresh parsley, chopped
2 tsp salt
1. Combine everything except parsley and salt and cook together for about 40-45 minute or until carrots and lentils are soft.
2. Stir in parsley with salt to taste. Heat another minute and serve. Garnish with Swiss or Gruyere cheese if desired.
Servings: 6
The Verdict: I’ll bet you can guess what DH said. “It’s good, but it would be great with some chicken in it.” I thought it was very flavorful and bright in both appearance and taste. Almost tangy. A great stew for any time of year.

We are most definitely on the same page, as a red lentil soup is on the menu for today! The lentils are soaking for a bit, and shortly I will be cooking up onions, carrots, and celery with a bit of pastured pork sausage I dug out of the freezer. With a loaf of 5 min. bread it will be the perfect supper for this wet and dreary day! (I think I will add that can of tomatoes that your recipe has….sounds good!)

It’s has been COLD here too. It’s May and COLD and this worries me. Last summer we had the rainiest (and consequently darkest from all the cloud cover) summer since something like 1902. Anyway, stuff like this always hits the spot on a chilly day!
