Hearty Lentil Stew

dried lentils (sorted, rinsed, and drained)

tomatoes (chopped)

carrots (diced)

onions (chopped)

thyme

marjoram

fresh parsley, chopped

Combine everything except parsley and salt and cook together for about 40-45 minute or until carrots and lentils are soft.

Stir in parsley with salt to taste. Heat another minute and serve. Garnish with Swiss or Gruyere cheese if desired.
