For the record, I know that ground cherries are NOT the same as regular cherries. Ground cherries are similar to tomatillos and need to be husked. However, I did not have ground cherries, nor have I seen them at the farmer’s market, so I decided to use regular cherries for this recipe fromĀ Simply in Season.

3 cups ground cherries (I used regular cherries, pitted)
1/2 cup brown sugar
3 Tbs water
3 Tbs water
3 Tbs cornstarch
1 cup butter (softened)
1 1/4 cups sugar
1 tsp vanilla
4 eggs (slightly beaten)
2 cups flour
1. Mix cherries, sugar, and water in a saucepan and bring to a boil. Reduce heat.
2. Dissolve the cornstarch in the water and add to cherry mixture; cook, stirring constantly, until thickened. Cool while you finish the rest of the recipe.
3. Cream together butter, sugar, and vanilla with an electric mixer until light and fluffy.
4. Add the eggs and flour to the creamed mixture; spread on the bottom of a 10×15 inch jelly roll pan; score into 30 squares; put a spoonful of cherry mixture in the center of each square. Bake in preheated oven at 350F for 35-40 minutes.
Servings: 30
The Verdict: These were a hit with our family and friends when I took them camping. It was like a coffee cake, and the cherries were great.
