I’m not a huge fish fan, so this is something I never would have made if I wasn’t trying to cook all the recipes in Simply in Season. Speaking of which, I realized the other day that I have 190 to go before August. Eek! So expect a few more postings than normal while I catch up. For this recipe, I recruited DH to grill the fish instead of pan frying the fillets.

1/4 cup sour cream
1/4 cup mayonnaise (don’t forget, you can make your own)
1/2 bunch cilantro
1 1/2 Tbs lime juice
1 clove garlic, minced
4 tsp chili powder
2 tsp ground cumin
1/4 tsp ground red pepper
1 1/2 lb mild white fish filets (tilapia, rockfish, snapper, etc.)
8 small corn tortillas
2 cups cabbage, shredded
1. Puree the sour cream, mayonnaise, cilantro, lime juice, and garlic. Set aside. (Note: This is super yummy! I’m glad I had leftovers, it would be great as a salad dressing or mixed with tuna fish for a tuna salad.)
2. Combine the chili powder, cumin, and red pepper. Rub onto the fish and then either fry or grill them. (DH didn’t measure out the spices, he just winged it).
3. Serve the fillets on a tortilla along with cabbage and the sauce.
Servings: 4
Yield: 8 small tacos
The verdict: DH said he’d rather have a regular taco, but he did have two servings so he must have liked it. I LOVED it, the cilantro was so fresh and gave the sauce a great flavor. Another bonus of growing herbs in your own kitchen! I bought a planter of herbs and it’s in front of my living room window on the entertainment center.

I love how cooking projects can open our eyes to great new things! We absolutely LOVE fish tacos at our house. We make them with a chipotle slaw that kicks the heat up a bit and increases the interest quotient. Using different fish changes things up too. We like blackened salmon tacos particularly well.
Mmm. Shrimp tacos are great too.
