We finally got an eggplant from our CSA! I’ve been dying to try this recipe all summer. Despite the confusing directions from Simply in Season, DH and I figured it out.

2 Tbs oil
2 tsp balsamic vinegar
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp pepper
1 large eggplant
8 slices cheese
2 tomatoes (sliced)
8 leaves fresh basil
4 buns (6-inches each)
1. Mix the oil, vinegar, mustard, salt and pepper in a small bowl.
2. Slice eggplant 1/4 inch thick. Grill, brushing the oil mixture on as you go.
3. Layer eggplant, tomatoes, and cheese on toasted buns.
Servings: 4
The Verdict: “You know what this book really needs?” asked DH when I asked him to figure out the directions. “Pictures.” I totally agree! Finally we decided to just use the sauce and grill the eggplant, using the other ingredients as we wished. It tasted wonderful, although bacon would have been a tasty addition.

Mmm … this looks good! I love grilled eggplant and I think the vinegar and mustard would give it a great flavor.
