One thing about being away for a week and a half . . . you forget what’s in your pantry, cupboards, and other things you thought you had end up moldy. And so I found myself with few ingredients and a hungry DH. Always the quick thinker, DH grabbed a package of frozen brisket out of the freezer and set it in a pot to thaw. I searched through Simply in Season for a suitable side dish that I could make with ingredients I had on hand. Easy Potato Bake fit the bill.

4 large potatoes, thinly sliced
1/4 cup onion, chopped
2 Tbs butter
1 tsp salt
1/2 tsp thyme
1/8 tsp pepper
1 cup shredded cheddar cheese
1. Preheat the oven to 425F.
2. Thinly slice the potatoes and put in a 2 quart dish.
3. Melt the butter in a saucepan on the stove; add all other ingredients (except for cheese) and heat through. Drizzle the mixture over the potatoes, cover, and bake for 45 minutes or until tender.
4. Sprinkle cheese on top and bake another 15 minutes.

The verdict: Very simple, yet tasty. Kind of reminds me of scalloped potatoes except less creamy and calorie-laden.

I have made these several times and have left off the cheese. Another way to speed up the process to to microwave the potatoes in the casserole dish for a few minutes before finishing the baking in the oven.
