I’ve officially declared that I prefer making waffles to pancakes. As you can see from the photo above, I am horrible at cooking them. Waffle irons are so much easier. Dump in the batter, close the lid, wait for the light to come on, and presto! Waffles. If you are staying at a hotel it’s even easier. Head down to the free breakfast room, take a cup full of batter, put it in the waffle maker, give it a spin, and when it’s done the little beeper goes off.
Despite their appearance, however, these cornmeal wheat pancakes from Simply in Season were rather tasty.

1 cup boiling water
3/4 cup cornmeal
1 cup buttermilk
2 eggs
1 Tbsp honey
1 1/2 cups whole wheat flour
1 Tbs baking powder
1 1/2 tsp salt
1/4 tsp baking soda
1. Stir together water and cornmeal until thick.
2. Beat buttermilk, eggs, and honey into the cornmeal mixture.
3. Sift together remaining ingredients and stir into cornmeal. (do not beat) Fry on greased medium-hot frypan.
Servings: 4
The verdict: When I first put these on the griddle, they puffed up like a balloon. Yikes. I tried turning them over and smashing them down, but all that did was cause the innards to squish out and required me to turn them over again, burning the centers. I then realized that I had the heat too high. DH says I cook like a man LOL. So I lowered the heat, and tried again. I tried the little trick where you wait until the bubbles form. Nope, burned again. I think I may have needed more buttermilk in the batter. But even though they were cooked unevenly, I LOVED the taste! Cornmeal, yummy.

I adore cornmeal pancakes. Having grown up in RI, I was brought up on Johnny Cakes – our thin pancakes made with white corn flour. But I, too, am terrible at making pretty pancakes. So I’ve moved on to making cornmeal waffles. Blueberry cornmeal waffles, actually. Yum!!
