Simply in Season suggests that this would be a great camping dish – and I agree! It would be fun for kids, too, to see the “dumplings” magically bake.

3 cups berries (I used blueberries)
1/3 cup sugar (could easily substitute honey or maple syrup here)
1 Tbs water
1 Tbs lemon juice
1 cup baking mix
1/2 cup milk
3 Tbs sugar
1. Combine berries, sugar, water, and lemon juice in a frypan. Cover and bring to a simmer.
2. Combine baking mix, milk, and sugar and drop by spoon fulls onto the berries. Cover and simmer for 15 minutes or until dumplings are done.
Servings: 4
The Verdict: I love how the lemon juice complements the blueberries. The dumplings didn’t have much taste to them, so I’m guessing they were just there to soak up the juice. Would have been excellent with ice cream!
