While not nearly as good as my mom’s recipe for White Chili, this is a more than passable rendition.

1/2 medium onion chopped
1/2 green pepper chopped
3 stalks celery chopped
1/4 cup mild green chilies
2 cloves garlic (minced)
2 Tbs butter
2 Tbs flour
2 cups chicken broth
1/2 cup milk
2 cups cooked navy beans
2 cups corn
1 cup cooked chicken (or turkey!)
1/4 cup sour cream
1 tsp poultry seasoning
1 tsp ground cumin
1. In a large frying pan, saute’ onion, pepper, celery, chilies, and garlic in 1 T oil until just tender.
2. In a soup pot, melt the butter, blend in the flour, stir in broth and milk. Cook over high heat, stirring constantly, until sauce thickens.
3. Add remaining ingredients to pot and heat through. Season to taste with fresh cilantro, salt, papper, and garnish with cheese.
Servings: 6
The Verdict: This is a nice and creamy soup, with the calorie count to match. While the flavors are excellent and the texture is awesome, my mom’s version doesn’t have the creaminess but does have a nicer bite/spiciness to it. I’ll have to make her version very soon. In the meantime, I do recommend this recipe.
