Wednesday was my last winter CSA pickup, sniff sniff. I’m not sure I’ll do it again next year, as it was quite a drive. I thought it was pretty neat that we received a bag of sprouted peas and radish sprouts. So I decided I’d make some sort of sandwich to go with the Celery Cream Soup that I had planned to make from Simply in Season. I picked up a loaf of bread from Salt of the Earth when I picked up my share.

Kitchen tip: I have since learned that the owner of our winter CSA substitutes sprouted peas for chickpeas / garbanzo beans for most recipes. How cool is that?

1 cup sprouted beans, peas or lentils (or a mixture)
2 Tbs tahini
2 Tbs lemon juice
1 Tbs extra-virgin olive oil
2 cloves garlic, diced
1 tsp ground cumin
1 tsp ground cayenne pepper
Sea salt and freshly ground pepper, to taste
Boil bean sprouts for 10 minutes, or until soft, then drain. Mix with remaining ingredients by mashing with a fork. (For a smoother consistency, use a food processor.) Serve with seasonal vegetables, chips, crackers or toasted pita bread. Serves 6 as an appetizer.
The verdict: I could have used about half the amount of red pepper, but as I’m fighting a sinus infection it actually helped clear me up. The tahini flavor is quite pronounced, I’m not sure if it’s because of the ratios or if it was because the peas have a milder flavor than the peas. Either way, it’s a winner!
