I love spring! Spinach and Swiss Chard are available at the farmer's market, and so I couldn't resist using the "Hellmann's mayo technique" one more time using a recipe that features fresh spinach.

I love spring! Spinach and Swiss Chard are available at the farmer’s market, and so I couldn’t resist using the “Hellmann’s mayo technique” one more time using a recipe that features fresh spinach.

Now, you could easily use Swiss Chard or other greens in place of the spinach. Or another nut instead of almonds . . . I’m thinking pine nuts would work great. You could even use feta in place of the Parmesan. Go crazy and put your own special twist on it!

To show you how fast and easy it is, here is a video that walks you through it. It’s only the second video I’ve made, although I’m wanting to do more of them. They are just so darn fun to make! Perhaps if the weather clears I’ll do a video tour of my garden.

The Verdict: I loved serving it over more fresh spinach. I think it could have used some more topping, but otherwise it was tasty and fast, two things I love on a weeknight!
