When I saw the title of this recipe in Simply in Season, I had to smile. For some reason it reminded me of the Red Green Show. Or maybe Christmas. Regardless, the ingredients are simple, hearty, and works as a side or main dish. Eh. It’s just one of those good recipes to have in the back of your head.

5 small red potatoes (unpeeled, julienned)
2 Granny Smith apple, halved, cored and thinly sliced
1/2 cup green onion, sliced
1/4 cup celery (diced)
1 cup cheddar cheese or reduced-fat cheddar cheese, shredded (1 cup)
1. Season the potatoes with salt and pepper, and saute’ in a large frypan. May use oil.
2. Add the apples, onions, and celery and stir. Cook on low heat, covered, stirring occasionally, until tender. (About 20 minutes).
3. Sprinkle cheese on top, cover and cook another minute to melt. Serve immediately.
Servings: 4 as a main dish, up to 6 as a side.
The Verdict: These turned out much better than expected. I loved theΒ hint of sweetness, and the apples and cheese complemented the pork that DH made in his smoker. I will definitely make these again!
