Red Taters and Green Grannies

red potatoes (unpeeled, julienned)

Granny Smith apple, halved, cored and thinly sliced

green onion, sliced

celery (diced)

cheddar cheese or reduced-fat cheddar cheese, shredded (1 cup)

Season the potatoes with salt and pepper, and saute' in a large frypan. May use oil.

Add the apples, onions, and celery and stir. Cook on low heat, covered, stirring occasionally, until tender. (About 20 minutes).

Sprinkle cheese on top, cover and cook another minute to melt. Serve immediately.
