DH and I LOVE Indian food. In fact our first date was at Bombay Cuisine. I’ve always wanted to make naan at home–luckily Simply in Season had the recipe!

1/4 cup water
1 Tbs active dry yeast
1 Tbs sugar
1 cup water, lukewarm
1/4 cup plain yogurt (I substituted kefir)
1 egg, beaten
2 Tbs oil
2 tsp salt
5 cups bread flour

1. Mix water, yeast, and sugar in a small bowl until dissolved.

2. Stir lukewarm water, yogurt, egg, oil, and salt in a separate bowl. Stir in yeast mixture.

3. Stir in enough flour to make a soft dough. Knead 5-10 minutes. Place in greased bowl, and turn to grease both sides. Cover with damp cloth and let rise 1 hour. Separate dough into golf ball sized balls. Roll each to 1 1/16 thickness (they cook best when thin). Preheat frypan on stove to medium-high. Add 1/2 tsp butter to frypan and allow to melt. Place 1 round of dough at a time in frypan. Cook on each side until lightly browned and puffy (about 2-3 minutes per side). Wrap in a towel to keep warm while cooking the remaining breads.

Servings: 8

The Verdict: Rather than try to measure out a 1/2 tsp of butter, I heated the pan and just “buttered” the bottom with the stick of butter. The first two weren’t super fluffy, but the dough became easier to work with and as the pan became hotter it cooked pretty fast. The flavor was awesome – but then, dough fried in butter is bound to  be good! It turned out a little like pita bread because it wasn’t as thin and crispy as what we get at the Indian restaurants. They must have a trick, because I rolled it as thin as I could. Oh well, we still ate more than we should have! Loved it.

    How funny is that? Both of us making naan on the same day!
    Your recipe is very similar to mine…easy, eh? To get them to roll out easier and thinner, it’s best to let the dough rest for 1/2 hour AFTER rolling into balls. It relaxes the gluten again and stretches a bit better. We had ours with lamb and tzatziki…SO good!

    Someone at an Indian Restaurant in East Lansing told me they have these big pit-oven things, and the kind of “throw” the dough at the side of it and let it cook that way. So I’d say unless you build a pit oven; that’s a pretty good at-home version!
