This is the song that never ends . . . oh wait, wrong lamb chop. A few days ago I marinated lamb chops for the recipe from Simply in Season and brought them to my mom & dad’s for Sunday dinner. They had not had lamb before other than with mint jelly a long time ago at a restaurant. I have not had it other than in Indian dishes or stew. So it was a new experience for all of us!

8 lamb chops
1 small onion (sliced)
1 clove garlic (minced)
3 Tbs olive oil
2 Tbs wine vinegar
1 Tbs lemon juice
1 Tbs fresh rosemary finely chopped
2 tsp prepared mustard
1/4 tsp ground ginger
1/4 tsp salt
1. Place lamb chops in a deep ceramic or class bowl.
2. Combine remaining ingredients and pour over meat. Cover and marinate for 4-5 hours in the refrigerator. Broil over a hot charcoal fire or under an oven broiler for 5-10 minutes per side for medium rare.
Servings: 4
The verdict: My dad grilled these over his charcoal grill, and they smelled heavenly. They tasted good, too, although I couldn’t taste much of theĀ marinade. My family gave these an A-.
