Herb Roasted Lamb with Roasted Asparagus

In anticipation of spring and in honor of "roast" week in our Back to Basics Series, I present to you Herb Roasted Lamb with Roasted Asparagus.

So far I’ve felt very lucky that I chose Simply in Season to cook through. Julie from Julie & Julia had much more complicated recipes and expensive ingredients. And then . . . the spring lamb recipes are here. Ironically enough, even though lamb is associated with spring, the farm where I usually get it is low as they butcher in the fall.

2 lbs leg of lamb
1/2 tsp garlic (slivered)
1 1/2 Tbs soy sauce
1 Tbs oil
2 1/2 tsp fresh thyme leaves
1 1/2 tsp fresh marjoram
1 tsp salt
1/2 tsp pepper
1/2 tsp ground ginger
1 bay leaf

1. Trim leg of lamb of excess fat, cut slits in meat and insert garlic slivers with tip of knife.

2. Combine remaining ingredients and rub mixture thoroughly over the roast and into the meat. Place on a rack in a roasting pan and roast uncovered at 350F. Roast 20-25 minutes per pound. Let stand 20 minutes before carving. (Note: DH grilled this in his Smoker/Roaster/Grill Thing. That worked very well and added a nice smoky flavor. He also made the asparagus since the grill was already in use. Gotta love when DH makes dinner!)

Servings: 4

Roasted Asparagus

Layer 1 pound of asparagus spears in a single layer on a baking sheet. Sprinkle with 3-4 cloves of garlic (minced) and drizzle with oil. Bake in preheated oven at 400F or grill. It takes 5 minutes on the grill, a bit longer in the oven. If using the oven method, shake every few minutes.

The Verdict: The lamb was divine! Such a nice flavor, enhanced by the smoker. The asparagus was a perfect accompaniment. I had originally intended to also make some roasted potatoes, but didn’t have enough left. The lamb and asparagus were satisfying on their own with a glass of wine.

    This looks wonderful! I have been on a lamb kick lately and this sounds so tasty. I love the idea of doing this on the grill – what great flavor!
