Another one of the recipes from Simply in Season that I looked at and said “huh?” But I’m glad I tried it, as this simple salad is refreshingly good.

1/4 cup lemon juice
2 Tbs orange juice
1 Tbs honey
2 cups apple
2 cups carrots, shredded
1 Tbs mint springs
1/8 tsp salt
1/4 cup raisins
1. Mix lemon juice, orange juice, and honey until the honey is dissolved. (Note: I decided to do this the easy way and mixed it in my food processor, and included the mint in this step. Then I switched out the blades for the shredder attachment and shredded the apples and carrots into it. Then I transferred to a large bowl and stirred in the salt and raisins).
2. Grate apple into the juice mixture.
3. Toss with remaining ingredients and serve immediately.
Servings: 6
The verdict: I was skeptical. But I was wrong. It wasn’t too sweet and the mint and lemon complemented the carrot and apples well.
