I was grocery shopping on an empty stomach, so tempted by all the processed foods. I was tempted to hit a drive thru. I knew I wouldn’t have time to cook what I had originally planned to make for lunch. Then, the jar of marinated artichokes was calling me . . .
When I got home I boiled some whole wheat pasta and tossed with lemon olive oil. Yeah, the $30 bottle that I got for half price, technically. Then added the marinated artichoke hearts, pine nuts, jarred red pepper, capers, and feta cheese. Not super healthy, but better than drive thru. And SUPER tasty.

Oh, boy–I know that food-hunger-recipe madness, too! Speaking of chard, we just got a beautiful delivery of chard from our organic food cooperative! I think I’ll saute it with pancetta and olive oil.

Kudos for not giving in to the drive-thru temptation! What you whipped up looks very tasty, and much better for you than a burger and fries….LOL! 🙂 I’ll have to check out the lemon olive oil; that sounds delish!
