Favorite Meatloaf with Collards & Delicata
Believe it or not, I've only made one other meatloaf (Mediterranean Meatloaf). However, we have a lot of ground venison/beef to use up so I thought I'd give this recipe a try.

This is quite a versatile recipe; you can make it in a slow cooker, or bake it, or microwave it if you really want to. It's a great way to sneak in more vegetables.
This is a great recipe to use up whatever random vegetables you have in your refrigerator. It's based on a couple of other skillet dishes I've made over the years. Best of all, it's fast and frugal!
My friends at Collective Bias issued another challenge: make something in a slow cooker, using Frank's Red Hot sauce. I decided to combine it with my Dark Days Challenge and created the following recipe, which turned out great if I do say so myself.
This is an old favorite recipe from my Pampered Chef days, which I had forgotten about. It's a real crowd-pleaser.
