Tackle Dinnertime Challenges with Hellmann’s Chicken Change Up

This time of year, I tend to be uninspired in the kitchen. I can’t wait for spring! On top of that, I never seem to have enough time to cook the more wintry dishes on busy weeknights. Enter the Hellmann’s® Chicken Change Up.

 Truthfully, I had never heard of putting mayonnaise on chicken before. But when I read the recipe for Asian Crusted Chicken, I decided to give it a try.

Ingredients:

• 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise (or, you could even make your own mayonnaise if you’re feeling ambitious)
• 1 green onion, chopped
• 1 tsp soy sauce
• 1/2 tsp fresh grated ginger (or 1/4 tsp dried ginger, but go for the fresh!)
• 4 chicken breasts
• 1/4 cup dried bread crumbs (I had some Panko leftover from a previous promotion, but you can also make your own bread crumbs.)

Simply mix up the ingredients for the sauce, spread on the chicken, and sprinkle with bread crumbs. Then bake in a preheated 425F oven until cooked through, about 20 minutes but take the temperature of the chicken with an instant-read thermometer, OK? (Should be 165-170)

The Verdict: I couldn’t believe how fast this went together, and it was super tasty and moist, I’m guessing from the mayo. Although I’ve not tried this with homemade mayo, I’m not sure why it wouldn’t work.
