Some days, you aren’t hungry for dinner but want just a little something. It was one of those days that I decided to make Spicy Baked Apples from Simply in Season.
Spicy Baked Apples
4 large baking apples
1/2 cup brown sugar
1 tsp cinnamon
1 cup pecans (optional; without the pecans, the calories are about 200 less per serving!)
1/2 cup raisins
1 cup water
1/3 cup maple syrup
2 tsp lemon juice
1/2 tsp Ginger-root; fresh; minced (I used a pinch of ground ginger)
1. Peel the top third of each apple, core.
2. Whisk together the sugar, cinnamon, and nuts.
3. Stir in the raisins, and fill each apple with the mixture. Place apples in a small baking dish.
4. Mix together the water, syrup, lemon juice, and ginger. Pour over top of the apples and bake at 350F until just tender (40-50 minutes).
5. After the apples are done, pour the juices from the baking dish into a saucepan. Boil over high heat until the sauce is thickened, and pour over the apples in the baking dish. Serve in a bowl with or without whipped cream.
The verdict: So tasty, I loved the hint of ginger and maple. The whipped cream is a must.

You know, I think the calorie count assumes that you’re going to actually drizzle ALL of the sweetened juice from the pan over the whipped cream or whatever. So I’d take it with a grain of salt.

what type of apple did you use? I rarely cook with apples so not sure which is best to bake with for this recipe.

Um, some sort of Michigan apple. I don’t remember LOL. When you go to the store they will be labeled as good for eating or baking. Baking would be good for this recipe.
