This is a recipe from From Asparagus to Zucchini that I found last year when I was searching for a bok choy recipe. Before I realized that you can use glazes like this for any type of green or stir fry or meat. After taking a few classes at my CSA, I realized that a couple of glazes / stir fry sauces / salad dressings in your back pocket can make very efficient (and delicious!) use of most any vegetable that comes your way. This has become one of our favorites.
The original recipe is called Grilled Pork Chops and Bok Choy with Sesame Garlic Glaze, but I have used it with pork chops, chicken, Swiss Chard, and kale in addition to the bok choy. The ingredients are as follows:
- 3 T soy sauce
- 1 1/2 T sesame oil
- 1 1/2-2 tsp bottled Vietnamese-style chili garlic sauce
Directions: Mix all the ingredients together in a large dish. Put the pork chops (or chicken!) in the dish and coat all sides. Grill, using some of the glaze to baste while it cooks. Meanwhile, grill the bok choy until tender, basting with the remaining marinade. (I found that you can do this inside in a frying pan, it works just as well). The recipe says that the above glaze will work with 4 pork chops and 8 large stalks bok choy including greens, but I actually preferred to double the recipe and use half for the pork (send DH outside to grill that) and then use the remaining for the greens while I stir fried them. Whatever works for you!

I made something similar last week, I think it was a miso glaze. I used it on bok choy, which, by the way, will be at our 1st CSA pick-up tomorrow! With the leftovers I made a stir fry which was excellent!

What a lovely idea — I love the toasty flavor of sesame oil, and you can never go wrong with a bit of chile-garlic sauce. I’m always looking for new ways to “do up” the sauteed kale we seem to eat every few days — and this looks perfect (and fast).
