Can I just say, my new food processor is wicked fast? This recipe was perfect for testing it out.
I was a bit skeptical when I saw this recipe in the Main Dishes section of Simply in Season. Potatoes, butter, cheese . . . didn’t really seem like a main dish. So I decided to make it when meat-requiring DH wouldn’t be home for dinner. Lunchtime today presented such an occasion, as I am home on a much-needed vacation day.
I thought I’d search online to see if this is a “real” dish. Yep, it sure is! According to Wikipedia, it’s a common breakfast dish in Switzerland and is often used as a side dish nowadays.
Start by melting 3-4 T of butter in a large frypan. Note: It’s best if you can keep an eye on it. I was trying to figure out my food processor when I let the pan get way too hot and burn the crap out of the butter immediately on contact overheat. So I started over with another 4 T of butter. Then, add 4 C of shredded potatoes and saute’ until they’re cooked and slightly browned, stirring occasionally. Press them down into the pan, cook 1 minute, then flip and fry the other side. Kind of like a giant potato pancake, in theory. In practice the “flipping” didn’t work so well so I just stirred it some more. Top with 1 1/2 C cheddar cheese until melted. Cut into wedges and serve.
The verdict: This was surprisingly tasty! Must be all that butter. It’s filling, so I guess it does fit in the main dish category. I could also see making this even better by adding onions or other omelet-types of fixings to it as suggested in the Wikipedia article.
