Ingredients
- 6 eggs
- 1 medium onion, chopped
- 2 cups vegetables, chopped
- 1/4 cup cheese
- salt, pepper, and herbs to taste
Instructions
- Preheat broiler
- If not using a nonstick skillet, place a little oil in a 10 inch skillet and heat
- Add onion and soften for a few minutes
- Add remaining vegetables and cook until desired doneness
- Meanwhile, whisk together the eggs and seasonings in a medium bowl
- Fold in the cheese and cooked vegetables
- In the same pan, add a little more oil and cook the egg and vegetable mixture about 10 minutes, covered, until the top is mostly set
- Place in broiler, uncovered, until the top browns
- Cut into 4 wedges and serve
