Ingredients
- 1 cup quinoa flour
- 1/3 cup ground flax seeds
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon sea salt
- 2 large eggs
- 3/4 cup sugar
- 1 1/3 mashed very ripe bananas
- 1/3 cup melted coconut oil
- 2 teaspoons vanilla extract
- 1 cup quinoa, cooked
Instructions
- Preheat oven to 350F.
- Grease a 9x5 loaf pan.
- In a large bowl, whisk together quinoa flour, flax seeds, baking soda, cinnamon, and salt.
- In a medium bowl, whisk eggs until blended. Stir in sugar, bananas, coconut oil and vanilla until well blended.
- Add the egg mixture to the flour mixture and stir until just blended. Gently fold in quinoa.
- Spread batter evenly in prepared pan.
- Bake in preheated oven for 55 to 60 minutes or until top is golden brown and a tester inserted in the center comes out clean. Let cool in pan on a wire rack for 10 minutes, then transfer to the rack to cool completely.
