I’m finally home! There’s nothing like sleeping in your own bed, and eating something from your own kitchen. So this morning I decided to whip up some oat bran muffins from the new edition of Simply in Season.
2/3 cup brown sugar
1/3 cup oil
1 cup milk (could also use buttermilk)
1 egg
2 Tbs molasses
1 1/2 cup oat bran
1 cup raisins (could substitute any dried fruit)
2/3 cup flour
1/2 cup wheat germ
1/4 cup sesame seeds
1/4 cup flax seed meal (all I had was flax seeds, so I gave them a spin in the extra coffee grinder I keep on hand for just such occasions)
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1. Mix brown sugar through molasses in a bowl.
2. In another bowl, mix the rest of the ingredients. Add to the wet ingredients.
3. Bake in a greased muffin pan (fill cups about 2/3 full) in a preheated oven at 400F for 18-20 minutes.
Servings: 12
Yield: 12 muffins
The verdict: Very tasty, but a little dry. I’m also wondering if a little applesauce would taste good. Overall they were yummy even plain (I’m sure DH will add gobs of butter when he gets home from his morning run). I like the little textures of the sesame seeds, bran, the nuttiness of the germ. Will definitely make these again.

I love muffins jampacked with wholesome goodness. I’d probably have to find a substitute for the oat bran (since we don’t have gluten free ones) but thanks for giving a base recipe!

Mmm.. Those look good. Have you ever looked at Seasonal Kitchen by Michele Cranston? I absolutely love that book! Another seasonal cooking book I love is Seasons: A Great Year of Tastes. I’m really into cooking seasonally and locally, too.

Mmmmmm! One of my very favorite things is a nice cup of Dunkin Donuts coffee and a nice honey bran muffin. Of course eating out isn’t very frugal so it s a once in awhile treat for me.
I have been wanting to try making my own bran muffins at home but have been waiting for just the right recipe to come along. I think this is it!
