The folks at the Mennonite Central Committee were kind enough to send me the newer version of Simply in Season for my project, since I had the “old” edition and I thought well hey, it would be good to have the additional recipes included too! Then I realized that just added about 18 more recipes to my total. Sigh. I think I’m still on track to finish by August, though. So that’s good.
This is one of the recipes that I’m glad is in the new edition. Even though I’m making it out of season (and thus had to buy cauliflower from who knows where), I anticipate it will be good.
Nutty Cauliflower Skillet
1 Tbs Ginger-root; fresh; minced (I used jarred; the fresh ginger wasn’t looking so good in my frig)
2 cloves garlic clove, minced (I used jarred again; I didn’t want to make the jarred ginger feel inferior)
2 Tbs oil
1 head cauliflower florets
1 tsp coriander
1 tsp ground cumin
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1/2 cup tomatoes (actually, I threw the whole can in – looked kinda skimpy, and the spices were starting to burn)
1 cup peas (threw the whole can in here too, didn’t want half a can of peas in the frig)
2 Tbs peanut butter
1. Saute’ the ginger and garlic in oil in a large soup pot on medium-high heat.
2. Add the cauliflower and spices and mix to coat.
3. Add tomatoes, reduce heat to medium, and simmer until the cauliflower is crisp-tender, about 10-12 minutes.
4. Stir in the peanut butter and serve over rice (the recipe calls for brown rice, but I LOVE basmati).
5. Garnish with peanuts and fresh cilantro if desired.
Servings: 4
The verdict: Spicy. We loved it. Although, as you probably guessed, DH said “it could use some chicken.”
