OK, seriously? I have eaten more soup since starting this project than I think I ever have in my entire lifetime. Did you know there are 40 soups and stews in Simply in Season. I’ve made 32. That means I have 8 more to go. With the weather in the upper 90s (that’s 35 celcius for my Canadian readers) I am starting to doubt my resilience to finishing this project. But for now, I’m carrying on.

2 Tbs butter
1 onion (chopped)
2 cups vegetable broth
1 cup green beans (I didn’t have any so I used kale)
10 new red potatoes; quartered
4 carrots (sliced)
1/2 cup peas
2 cups milk
1. Melt butter over medium heat in soup pot. Add the onions and saute’ until softened.
2. Add broth, beans, potatoes, and carrots and gently simmer until they are just tender. Then add the peas and cook another minute or until bright green.
3. Add milk and heat gently through. Add salt and pepper to taste; may garnish with chopped fresh herbs.
Servings: 6
The Verdict: It definitely needed the salt and pepper and herbs. Otherwise it was very milky. Overall, it’s a good hodgepodge recipe – a good way to use up your veggies. Nothing spectacular, but sometimes you need those kinds of recipes, you know?

Yay! I’m from Nova Scotia so this caught my attention right away. Yes, this is a dish that needs additional spices. It’s comfort food but not bursting with flavour or anything. This is a dish for a cold winter night.. not when it’s so hot outside. You poor dear 🙁 I admire your determination!

It was ‘milky’ because you definitely NEVER use milk in Hodge Podge! Cream only! It is much better refridgerated and heated up the next day as well.
