If you had asked me two years ago whether I had ever cooked or baked with wheat germ or oat bran, I would have given you the side eye. For starters, I didn’t bake or cook that much. Secondly, I would have assumed you’d have to go to an overpriced health food to get those items.
My how times have changed. The health food store is still overpriced for packaged/processed goods, but a downright bargain for bulk items and spices. And I love Mostly Oats Granola from Simply in Season.
This recipe takes quite a bit less baking than the other one, and throws together in a snap. The nutrition information isn’t bad ether.
6 cups rolled oats
1 cup shredded coconut
1 cup wheat germ
3/4 cup walnut pieces
1/2 cup sunflower seeds
1/2 cup honey
1/3 cup oil
1/3 cup water
1 tsp vanilla
1 cup raisins
1. Combine dry ingredients; then combine wet ingredients and pour over oat mixture. Stir well, spread in a thin layer on baking sheets.
2. Bake in a preheated oven at 325 F for 10 minutes; stir, bake 5 minutes; stir again, and bake 3-5 minutes. Cool. Store in airtight containers.
The verdict: In hindsight, it would have been good if I could have made this and the other granola recipe side by side. Just by looking at the ingredients, I anticipated this to be good – but not *as* good – as the other recipe. In actuality, it was good but needed a lot of raisins for extra flavor. The photo above was taken before I added the raisins.
