I’m seeing green! This week’s menu will include lots of salads for lunch. I have so much left from my CSA that I need to start incorporating it much more into my diet. What else will I be making this week?
Monday – Chard Enchiladas
Tuesday – Sausage with Spring Turnips and Turnip Greens
Wednesday – Sausage & Kale Soup
Thursday – Heirloom Beans with Leeks
Friday – Indonesian Leek Pie
Saturday – Barbecued Salmon, Hamburgers (we’re going camping, woo hoo!)
Sunday – Middle Eastern Meatloaf on the grill

Ditto for the greens! We have had such a busy 2 weeks that I have a fridge full of greens that need to be used up. I might even freeze the kale if we can’t get around to using it by tomorrow. The chard is easy enough to use up as it steams down to manageable portions! And it is going to be one huge salad for supper tonight!
