Sandwiches are? a summertime staple in our household, so I jumped at the chance when Mezzetta asked me to come up with a sandwich recipe using some of their products.
Like many culinary and craft projects, I decided to let the ingredients speak to me. I lined up the jars on the counter. (Minus the stuffed olives, which DH managed to polish off straight away. He LOVES olives! Apparently they were good. I wouldn’t know, I didn’t get any. But I digress.)
For some reason a grilled chicken sandwich sounded good to me. We are trying to eat more healthfully so chicken and veggies are a great choice. So I went to the store and picked up a chicken breast and some buns. Then I set DH to working on the grill (I could have baked it, but I wanted the grill flavor). I decided that with the rich flavors of the Mezzetta foods, I needed some fresh ingredients and cheese to balance it out. Here is what I came up with.
Ingredients:
- buns
- chicken breast (can season with Mesquite, seasoning salt, etc.)
- cheese
- lettuce
- tomato
- Mezzetta Roasted Red Bell Peppers
- Mezzetta Olive, Parmesan and Garlic Everything Spread
Directions:
You’ll want to season the chicken with seasoning salt and Mesquite seasoning, or any seasoning of your choice, actually. This step adds a lot of flavor!
Then, you’ll want to grill the chicken. I know, you can just bake it, but grilling adds so much flavor!
Once it’s grilled, assemble the chicken, cheese, spreads and remaining ingredients on the bun.
The Verdict: Oh. My. Word. It was so savory, so fresh. We LOVED it. I was a little worried that it might be dry because I didn’t have any mayo or anything on it, but the red peppers and onions provided lots of peppery, wet goodness. Which sounds kind of gross but it was spectacular.
I ended up loving the Mezzetta products, and I can see a ton of uses for them–especially in the summer with garlic bread, pasta salads, and everything Italian. Or just out of the jar if you’re DH.
