A sweet bread that’s great for everyday eating.
This recipe from Green Market Baking Book: 100 Delicious Recipes for Naturally Sweet & Savory Treats is surprisingly sweet for having only honey as a sweetener.
Ingredients:
- 1 3/4 tsp dry yeast
- 1 cup warm water
- 6 oz honey (1/2 cup)
- 3/4 cup plus 1 Tbsp whole milk
- 5 Tbsp soft butter
- 2 1/2 C whole wheat flour
- 2 tsp kosher salt
- 2-3 C bread flour
Directions:
- Dissolve yeast in warm water; add 2 tsp of the honey and allow to sit until the yeast gets foamy (about 10 minutes).
- Combine milk, honey, and butter together over low heat until butter melts and add to the yeast.
- If using a mixer bowl, add everything to the mixer bowl except the bread flour and mix well.
- As mixer is kneading, gradually add the remaining bread flour until it starts to separate from the bowl in a big ball; knead a few minutes until nice and stretchy. Cover and let rise until double.
- Punch down and let rise another 30 minutes.
- Form into two loaves and let double in size again.
- Bake for 20-25 minutes at 375F.
The Verdict: The recipe didn’t say what temp, so I guessed 375F and it probably could have gone a little longer. I also forgot step 5 but it seemed to turn out OK. It was really sweet, as I mentioned before, but I liked the texture and flavor.
