This main dish salad from Simply in Season makes a super quick dinner.
Greek Salad with Grilled Chicken
Ingredients
- 1/4 C chicken broth
- 2 T red wine vinegar
- 1 tsp dried oregano (or 1 T fresh)
- 2 tsp olive oil
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 clove garlic (minced)
- Mixed salad greens
- Chicken
- Tomatoes
- Feta Cheese
- Olives
- Cucumbers
Instructions
- Mix the dressing.
- Grill chicken, using some of the dressing as a glaze.
- Top mixed salad greens with the chicken, tomatoes, feta cheese, olives, and cucumbers.
The Verdict: The dressing goes great with the feta cheese. This was a very satisfying salad – tasty yet healthy.
