About this time of year, my herbs start to grow like crazy. So when Hellmann’s® invited me to try out their new Hellmann’s® Mayonnaise Dressing with Olive Oil, I knew right way that an herb dip was in order!
Of course it’s best if you can make your own mayo, but I have not had much success in the past – it always tastes too oily. So I was unsure about trying store-bought mayo with “more olive oil” in it.
The original Easy Vegetable Diprecipe they sent me was very simple – 1 package Knorr® Vegetable recipe mix, 1/2 cup Hellmann’s® Mayonnaise, and 1 container (16 oz.) sour cream. However, I wanted to use fresh herbs, so I turned to the internet and discovered this recipe at AllRecipes.com
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup minced fresh parsley
1/4 cup minced fresh chives
2 tablespoons minced fresh tarragon (my tarragon died so I substituted sage. Don’t try that.)
1 tablespoon lemon juice (I didn’t have any so I omitted it)
2 teaspoons minced garlic (I just used a couple of cloves)
1/8 teaspoon salt
1/8 teaspoon pepper
Assorted fresh vegetables (when the peppers start to proliferate in the garden I’ll be using those!)
Mix well and refrigerate for at least an hour.
The Verdict: I really love how I was able to go out into my garden and pick the seasonings. The sage totally clashed though, in hindsight I should have snipped some thyme instead. The mayo and the sour cream mixed up very smooth, and seemed cleaner tasting than the store-bought vegetable dip.

Oh I love this dip! We make dips of all sorts every week. It’s our way to snack after a long day and while dinner is cooking. This dip looks wonderful.

Oh, we love fresh herb veggie dip! I’ve been wanting to make my own mayo for awhile and haven’t got around to it. You can also substitute plain Greek yogurt straight across for the mayo and/or the sour cream. Sometimes we just do half mayo, half yogurt and you can’t tell the difference at all. You can also add just a dash of apple cider vinegar and olive oil to the yogurt for a flavor really close to mayo.
