There’s a definite chill in the air, and summer is definitely over. Not sure how much longer fresh sweet corn will be available, but if you do have some to use up, this is an excellent side dish.

Ingredients:
- 3 Tbsp butter
- 1 C green pepper (chopped)
- 1/2 C onion (chopped)
- 4 C corn
- 1/4 C water
- 1 Tbsp honey
- 1 tsp salt
- pepper to taste
- 2 Tbsp red sweet pepper (optional, I didn’t use)
- 1/2 C cheddar cheese (shredded)
- 4 slices bacon (cooked and crumbled)
Directions:
- Melt butter in a large frying pan and saute the green pepper and onions for about 2 minutes or until softened.
- Add corn, water, honey, salt and pepper, and red pepper (if using), mix well, and cover and cook over medium heat for 10-12 minutes.
- Top with cheese and bacon and serve.
The Verdict: Normally I don’t think you can improve on corn on the cob with a bit of real butter and sprinkling of sea salt, but for a side dish this is really good. The savory peppers and onion counteract the sweetness of the corn a bit, but then it’s sweetened with honey so the end effect is that you actually taste the different flavors in the corn. DH loved this, but then it has bacon and cheese so that wasn’t a real surprise.
