When I posted about Hellmann’s Chicken Change Up a couple of weeks ago, I had no idea I was unleashing something in my kitchen. Since then, DH has taken that idea and improved upon it.
Which is fine by me – I love when DH cooks! He took the Asian Crusted Chicken recipe and kicked it up a notch, adding his own seasonings to the mayo. I have to say, this technique – seasoning mayo and baking the chicken – is quickly becoming a favorite. It’s very inexpensive to serve along with a salad or rice. And, because it goes together so quickly, it’s saved us money by helping us not go out to eat so much.
The most recent iteration of the mayo chicken that I’ve tried is the Tuscan Glazed Chicken, again from the Hellmann’s site.
Ingredients:
- 1/3 cup Hellmann’s® or Best Foods® Real Mayonnaise (could also make your own)
- 3 Tbsp. finely chopped roasted red pepper (it would have been cheaper to make my own roasted red peppers last summer, but since I didn’t get around to it, I used jarred)
- 1 tsp. garlic powder (since I didn’t have garlic powder or Italian seasoning on hand, I used Penzey’s Italian Dressing base.)
- 1/2 tsp. dried Italian seasoning
- 1 tsp. balsamic vinegar
- 6 boneless, skinless chicken breast halves (about 2 lbs.)
Directions:
- Preheat oven to 425F.
- Mix up all ingredients other than the chicken in a medium bowl.
- Place chicken on a baking sheet, spread the mayo mixture on top, and bake for 20-30 minutes or until the internal temperature is 170F.
The Verdict: We ended up adding Parmesan cheese, but it was very tasty indeed. This mayo thing does work to help keep things moist.
