“A breakfast treat that’s also a good snack when baked in a mini-muffin tin,” says Simply in Season.

I say, wow! Chock full of goodness! It feels like they threw everything but the kitchen sink in these muffins:

In a LARGE bowl, combine:

  • 1/2 C flour
  • 1/2 C whole wheat flour
  • 1 C oat bran
  • 3/4 C brown sugar
  • 1 T cinnamon
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt

Then, add

  • 2 large tart apples (peeled, cored, shredded)
  • 1 1/2 C shredded carrots
  • 1 C chopped walnuts
  • 1/2 C raisins.

Stir well.

In another bowl, whisk together

  • 2 eggs
  • 1/2 C milk
  • 1/4 C oil

.Mix with the flour mixture until moistened. Fill muffin tins about 3/4 full and bake at 375F for 18-20 minutes.

The Verdict: These are very delicious, although a bit on the dry side. Well, not dry exactly, but because of the oat bran you definitely need butter. You won’t be able to eat just one, but don’t feel too guilty – all the healthy ingredients makes up for it.

    AMAZING!! So great!!! But I used 1 cup rolled oats instead of oat bran and 1 cup golden flaxseed meal instead of walnuts. LOVE LOVE LOVE

      great idea, I’m always looking for ways to incorporate flaxseed!
