Yes, I’ll be on a strawberry kick for awhile. Simply in Season has a few strawberry recipes left, so I’ll be making regular stops at the neighborhood strawberry stand for sure. Michigan strawberries have so much flavor compared to the California ones that I’m sure are picked green or something because they are trucked from so far away. The only problem is making sure you eat them before they start to go bad, which is much faster than store-bought.

1 cup apple juice
3/4 cup water
2/3 cup sugar
1/2 tsp ground cinnamon
1/8 tsp ground cloves
3 cups strawberries
1/4 cup water
2 cups plain yogurt
1 tsp vanilla
1. Combine apple juice, water, sugar, cinnamon, and cloves in a saucepan and bring to a boil over medium heat. Remove from heat and cool.
2. Puree strawberries and water until smooth in a blender and pour into a large bowl.
3. Add yogurt and vanilla to strawberry mixture and also the apple juice mixture. Cover and refrigerate until well chilled. Can also freeze and is great with some of the ice crystals left in.
Servings: 6
The Verdict: I tried this before it was completely chilled and the flavor was wonderful. Love the cinnamon and cloves. DH said it tasted like his weight loss shakes. Which he likes, so I guess that’s a good thing.

As soon as I saw this in my Reader, I wanted strawberries! My question is, did you eat with a spoon or a straw? (I really mean that…it’s not meant to be a smart aleck question!) I’ve always been a little reluctant to try a cold soup, but this one looks good enough that I could be persuade!

I once made a warm strawberry soup. I can’t remember my exact process, but I remember simmering fresh strawberries in water with rapadura sugar, cinnamon and lemon and then I pureed it with a stick blender! It was heaven! Have you ever made a warm fruit soup?
