Don’t you love weekends where you actually have time to make a real breakfast? Or maybe you’re one of those people who has time to make a real breakfast every morning. For me, it’s a special treat. And this waffle/topping combination from Simply in Season is just perfect for such a weekend.
By the way, I just bought a new recipe program called Living Cook. It will allow me to calculate nutrition information, so as we enter the new year, I hope you enjoy this new feature!
Apple Spice Waffles
Although the recipe in the book says it serves 4-6, we got 10 waffles out of the batter.
2.25 cups whole wheat flour
3/4 cup rolled oats
1/4 cup oat bran
4 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/4 tsp ginger
1/4 tsp nutmeg
1 cup apple
1/2 cup pecans, chopped
3 cups milk
2 whole eggs
1/2 cup butter
1 Tbs honey
Combine dry ingredients. Stir in the apple and nuts. In a separate bowl, combine wet ingredients and beat well. Add to dry ingredients, and stir until well combined. Bake in a waffle iron. Note: The batter will seem thin at first, but don’t add extra flour. These waffles are especially tasty with Apple Topping.
Apple Topping
1/2 cup sugar
2 tbs butter, melted
2 Tbs cornstarch
5 medium apples, peeled, cored and diced
1 1/4 cup apple juice
1/2 tsp cinnamon
In a large saucepan, mix together the sugar, butter, and cornstarch. Then add the other ingredients and cook until the apples are soft and the mixture is thick. It’s a good idea to start the topping first, and let it simmer while you make the waffles. Note: You can also substitute honey for the sugar and water for the apple juice.
Servings: 12
Yield: 6 cups
The verdict: DH ate several of these, but I was only able to eat two. They are simply delicious.

Thanks so much for providing the nutritional analysis. That’s one of my “pet peeves” about Simply in Season. I wish they would’ve included that information for those of us who have to watch certain nutritional factors because of health issues. More With Less was written so long ago that it wasn’t included in most cook books of that era, so I understand, but maybe with newer editions they’ll update and include nutritional analysis? Thanks again…I love your Blog! 🙂
